Sample Recipe:

SWEET CUCUMBER PICKLES
Ann S. Taylor, Honaker, Virginia

  • 2 gallons cucumbers, sliced
  • 1 cup salt
  • 1 gallon boiling water
  • 2 tablespoons alum powder
  • 2 pints vinegar
  • 12 cups sugar
  • 1/2 teaspoon oil of cinnamon
  • 1/2 teaspoon oil of cloves

Mix the cucumbers, salt and boiling water. Let stand for 1 week and then drain. Add 1 gallon of boiling water and 2 tablespoons of alum powder. Let stand for 24 hours. Then drain. Add 1 gallon of boiling water and let stand for 24 hours. Then drain. Combine vinegar, sugar, oil of cinnamon and oil of cloves. Heat to boiling. Pour over cucumbers and let stand for 3 days and then can.
